Is there a smell more inviting than delicious muffins or cookies baking in the oven? Muffins are easy to make, easy to freeze, and a great solution if you need a quick breakfast on the go.
This recipe will make about 12 muffins and takes less than an hour to make.
Apple muffin:
Preheat your oven to 375 degrees.
½ cup (8 tablespoons) of unsalted butter at room temperature
¼ cup of sugar
¼ cup of brown sugar
1 large egg
1 cup of buttermilk or plain basic yogurt (not Greek yogurt)
1 cup of whole wheat flour
1 cup of all-purpose flour
1 teaspoon of baking soda
¼ teaspoon of salt
1 tablespoon of flour
2 cups of apples peeled, cored and chopped.
Add ½ cup of walnuts if desired.
Grease your muffin tin or line with paper cups.
Mix and beat together the butter and sugar. Beat until fluffy.
Add the egg and mix well.
Mix in the yogurt or buttermilk.
Stir in the flour, baking soda, and spices.
Fold in the chopped apples.
Distribute batter among 12 muffin cups.
Bake for 25-30 minutes. They are done when you poke with a toothpick and the toothpick comes out clean.
Use – Jonathan, Granny Smith or Honeycrisp apples as they won’t break down in the oven.
